This is inspired by The Strawberry Arugula Wrap recipe from the Forest Feast cookbook by Erin Gleeson. We absolutely love all of her cookbooks! They are minimal ingredients with quick and simple prep work involved when it comes to her recipes. And, as a bonus, her recipes are all vegetarian based!

A couple of our coworkers absolutely love her original recipe, but decided to have fun one day and make a version of it as a salad instead. This is what they came up with. We hope you enjoy it as much as they have. It is perfect for this time of year.
