This EVOO is one of the most complex oils in the fall 2024 season’s collection. It displays green fruity notes of kiwi followed by a pleasing amount of pepper and a lingering floral finish. Veronica Food’s partner, SAOV, in Portugal is using a high vacuum during the malaxation to remove all oxygen in the processing stage, which is prone to the most oxidation.
